What do you use your Spelt Berries for?
This is one of our family’s favorite meals!!! Fresh-milled spelt and avocado tacos with pickled cabbage topping and cilantro salsa on the side! Hands down the best tacos we’ve ever had!!! These are vegan and moist and super delicious! They are super healthy but taste like they are bad for you!!! Just my kind of food!
Below are the recipes for the spelt tortillas, the pickled cabbage and the cilantro salsa:
Spelt Tortillas: The spelt tortillas are made more like thin pancakes than like tortillas. In a large mixing bowl combine about 3 parts water to 1 part fresh-milled spelt flour. Also add a teaspoon or more of salt depending on how much batter you have. It should be a very watery batter. Stir the batter with a ladle each time before you grab a scoop from the bottom of the bowl and pour it onto a hot oiled skillet. It cooks like a thin pancake and bubbles
up on one side. After it bubbles, flip it and cook the other side! Cook it until the edges are crispy and all the water and steam is cooked off! If the pancakes are too thin and break when flipping then add more fresh milled flour to the batter. If the batter is to thick add more water. You will find the perfect consistency that makes the perfect spelt tortilla. The tortillas are so moist and pliable and delicious!!! They taste like spelt donut pancakes! We love them!
Pickled Red Cabbage: Before you start making your spelt tortillas, slice half a red cabbage super thin and add 1/2 cup rice vinegar, a tablespoon of real maple syrup and sesame seeds or 1 teas sesame oil (if I don’t have sesame seeds). And give that a mix and let it sit while you are preparing the spelt tortillas. This way the cabbage is still nice and crispy but has had time to soak up the flavors by the time you are ready to top the tacos with it! I prefer the crispier cabbage to the truly pickled one!
Cilantro Salsa:
Combine the following ingredients into a high powered blender or blender cup and mix:
1 bunch cilantro
1 4oz can of diced green chiles
1 avacado
1/4 cup coconut cream (solid cream)
3 cloves of garlic
2 teas salt
The juice of two limes
