Recipe for our "Purple Superfoods Veggie Soup":
Ingredients:
4 quarts water
1 cup Purple Prairie Barley
1 cup Black Beluga Chickpeas
1 cup Purple Rice
1 package Edward and Sons "No Chicken Bouillon"
3 bay leaves
1-2 teaspoons tumeric
2-3 teaspoons cardamom
1-2 teaspoons black pepper
2-3 teaspoons garlic powder (forgot this in the video above)
2-3 teaspoons salt
2-3 teaspoons smoked paprika
1-2 teaspoons fresh or dried oregano
1-2 teaspoons fresh or dried thyme
6-8 potatoes (anykind) (peeled or unpeeled)(cut and quartered)
2-4 carrots (any kind) (peeled ot unpeeled)(sliced/bite size)
1-2 zuccini or squash (diced)
1 leek (Sliced somewhat thin)
1 onion (if room allows) (cut and quartered)
1/2 to whole cabbage (sliced and cut into larger bite size pieces)
1 bunch kale (any kind but tuscan kale is the best!) (Cut into bite size pieces)
Directions:
Fill 8 to 10 qt pot with 4 quarts water. Place on stove top at medium heat. Add bouillon and all seasonings. Add purple barley and black lentils. Wait 10 minutes and then add purple rice. Wait another 10 minutes and while waiting wash and prepare your veggies then add the potatoes. Wait another 10 minutes and add the zuccini and leek and cabbage. Let simmer for about 20 minutes or until everything reaches your desired texture and consistency including the barley, beans and rice! Make sure to stir the bottom frequently to keep your grains from sticking.
